I love this recipe, plain and simple! It’s about fresh ingredients thrust into the heat of a fired grill; it’s about blackened tomatoes, peppers, onions, and garlic. The smoky flavor from the grilled veggies seeps into the flavor making something more spectacular than just simple ole salsa. There’s no trick, just great ingredients cooked well! Many of the recipes out there use a ton of ingredients. However, we prefer to keep things very simple here with only 7 main ingredients and we trust you’ll agree that it’s a winner!

- Roma Tomatoes
- White onion
- Garlic
- Jalapeno pepper

How to Make Fire Roasted Salsa
- Heat grill over medium-high heat and coat lightly with olive oil.
- Place tomatoes, onions, peppers, and garlic on the grill and cook 5 minutes on each side until char marks appear.
- Remove seeds from the peppers.
- Place all ingredients in a blender and blend on high until thoroughly blended.
- Taste and season with salt, additional spices, or lime.
Best Tomatoes for Fire Roasted Salsa
This really is a matter of preference. While we love using Roma tomatoes for most of our salsa recipes because they contain less water and thus form a slightly thicker salsa, feel free to use whatever tomatoes you prefer. Remember, the garlic, onions, spices, and pepper will drive the flavor of the salsa. However, if you want to be on the safe side, use Roma tomatoes instead of heirloom or beefsteak tomatoes.
How to Fire Roast Tomatoes for Salsa?
For this recipe, we used a grill which we set over high heat and then brushed lightly with oil. We then roasted our tomatoes, onions, and peppers for roughly 5 minutes on each side until dark char marks appear. Use tongs to handle your hot veggies. You can also roast the tomatoes by setting your oven to 450 degrees F and placing the tomatoes on a baking sheet coated with oil and bake for roughly 30 to 35 minutes.
How Long Will Fire Roasted Salsa Keep?
Fire Roasted Tomato Salsa will keep in the fridge for up to a week if placed in an airtight container. You an also freeze it in freezer bag or container and it will keep for up to 2 months.
Tips and Variations
- Get your grill hot. Before you place your veggies on the grill, make sure it’s hot. You want your grill to be heated for a few minutes over high to medium high heat. Once the grill is hot then brush your grill with olive oil.
- Use tongs. It’s best to use tongs for picking up your veggies and turning them over on the grill.
- Spices. Experiment by adding oregano, onion and garlic powder.
- Salt and tang. After you’ve made your salsa, adjust to your taste by either adding more salt or lime juice.
