This smoky Chipotle Tomato Salsa, made with chipotle chili in adobo sauce, broiled tomatoes and onions, is loaded with rich and authentic Mexican flavors. Fresh Tomato Salsa Chipotle is perfect for chip-dipping and drizzled over your favorite tacos.
Recipe Ingredients
- Plum tomatoes
- White onion
- Garlic – I roast the garlic with the peel on it to protect it from becoming dried out.
- Chipotle chili with adobo sauce – I use both the chili and sauce that comes in the same can.
- Lime juice
How To Make Chipotle Tomato Salsa
- Broil veggies. Preheat broiler and place tomatoes, onion, and garlic on a baking sheet lightly coated in olive oil. Cook veggies until they become slightly blackened, roughly 15 minutes. Set aside to cool.
- Blend all ingredients. Peel skin of garlic and place all ingredients into a blender and blend on high until salsa becomes smooth.
- Adjust flavor or consistency. To make the salsa spicier add more chipotle and adobo sauce. If salsa is too thick, add 2 tablespoons of water.
- Refrigerate. Place salsa in the refrigerator for roughly 2 hours to allow flavors to combine.
Chipotle Tomato Salsa Recipe Tips
I only have two quick tips. One, keep a close eye on your veggies when broiling them because they will cook quickly. Second, the adobo sauce isn’t as spicy as the chilis so if you want to add more smoky adobo flavor without making your salsa too spicy, consider adding a second tablespoon of the sauce.

Serving Suggestions
- Chip-dipping – This salsa is perfect for dipping with Homemade Tortilla Chips.
- Drizzle over tacos – This is a perfect spicy taco salsa; pour a nice heaping tablespoon on top of your favorite tacos. Try it with my Lentil Tacos!
- Add some spice to your salads. This salsa is wonderful as a garnish on top of salads. Try is with my Taco Salad or Southwest Quinoa Salad.
- As a side – Or simply serve this Fresh Tomato Salsa Chipotle with your favorite Mexican dishes like Vegan Chimichangas and Chipotle Sofritas.
- For cooking Spanish rice – Add it as a tomato base for cooking Spanish rice. I have a post for How to Make Spanish Rice. Use this salsa as a substitute for tomato sauce.
The consistency of this salsa should be somewhere between pureed and chunky. I love all the little smoky flecks of broiled tomatoes that show up in this salsa, gives it that authentic home-cooked look.
How Spicy Are Chipotle Chilis?
The short answer is yes. However, when compared with other chili peppers, they are only moderately spicy. For example, chipotle chilis aren’t nearly as hot as habanero or cayenne pepper but they are slightly hotter than poblano or jalapeno peppers.

Tomato Chipotle Salsa
This smoky Chipotle Tomato Salsa, made with chipotle chili in adobo sauce, broiled tomatoes and onions, is loaded with rich and authentic Mexican flavors. Fresh Tomato Salsa Chipotle is perfect for chip-dipping and drizzled over your favorite tacos.
Ingredients
- 5 Plum tomatoes, cored and sliced in half
- 1 Large white onion, cut into 1/2 inch slices
- 5 Cloves of garlic, unpeeled
- 1 Canned chipotle chili
- 1 Tablespoon adobo sauce
- 1 Tablespoon lime juice
- Salt to taste
Instructions
- Preheat broiler. Place cored tomatoes, sliced onions, and unpeeled garlic onto a baking sheet lightly coated with olive oil. Place baking sheet into the oven and broil veggies until they begin to blacken, about 15 minutes. Set aside and let cool.
- Peel skin off garlic and place all ingredients into a blender. Blend on high until smooth.
- Adjust consistency and flavor. Add 2 tablespoons of water if salsa is too thick. Add more chipotle pepper and adobo sauce if you want the salsa to be spicier.
- Pour salsa into an airtight container and refrigerate for 2 hours to allow flavors to combine.
