Why I Love This Cabbage Soup Recipe
This Cabbage Soup Recipe is my own invention and I’m rather proud of it. The idea for this soup came to me when my mom and I were eating at the Spaghetti Bender, one of our favorite restaurants. They have a minestrone soup that’s loaded with cabbage and it’s one of our favorites. So, I immediately set out to make something similarly warm and cozy. As a result, this Cabbage Soup Recipe has something of an Italian feel and flavor, a humble touch of Tuscany. Just take a look at the ingredients below and you’ll see what I’m talking about; everything’s farm-to-table fresh, loaded with nutrients, loaded with flavor.
What Is The Cabbage Soup Diet?
The Cabbage Soup Diet has been around since the 1950s. It’s a highly restrictive diet tailored for rapid weight loss. Adherents to this diet must follow a set of stringent guidelines wherein they eat Cabbage Soup along with healthy fruits and vegetables for a period of 7 days. The successful completion of the 7 days will purportedly result in the loss of 5 to 10 pounds. It’s believed that the diet works because most people can, at least for 7 days, endure such a demanding diet. However, this diet is really just a quick fix and doesn’t promote the types of lifestyle changes that result in longterm healthy eating habits.
Is Cabbage Detoxifying?
Recipes are considered to be detoxifying so far as they’re able to support the detoxification processes of the liver. Cabbage Soup happens to be one such recipe suitable for these purposes. That’s because cabbage (along with other cruciferous vegetables like broccoli and cauliflower) contains plant compounds which help the body eliminate toxins. Additionally, cabbage is a potent source of antioxidants.(1)

- Olive oil
- Vegan butter
- Garlic
- Mushrooms
- Cabbage
- Green onion
- Italian seasoning
- Dried dill
- White pepper
- Carrots
- Celery
- Potatoes
- Vegetable broth
How To Make Cabbage Soup
- Add olive oil and 3 tablespoons of the vegan butter to a large Dutch oven and heat over medium high heat. Lower heat to medium and, once butter is melted, add in the garlic and mushrooms; sauté for about 2 minutes until mushrooms become soft and garlic becomes fragrant.
- Add in the green onions, cabbage, Italian seasoning, dill, and white pepper, stir to combine. Saute for about 5 minutes until cabbage becomes wilted.
- Pour in the vegetable broth, carrots, and celery. Bring to a boil over high heat then reduce heat to low and let simmer for about 10 minutes.
- Add in the potatoes and remaining 2 tablespoons of vegan butter. Cook for an additional 10 minutes until the potatoes, carrots, and celery become fork tender.
Recipe Variations
This Cabbage Detox Soup recipe is pretty spot on already. However, I have just a couple quick ideas for you.
- Add a healthy source of protein like beans. Any white bean works great in this recipe.
- Turn it into a Ribollita Soup by adding some canned tomatoes! Ribollita soup is an Italian cabbage soup which includes canned tomatoes and chunks of Italian bread. All remaining ingredients between this soup and Ribollita are almost identical.

Basically you can break this Cabbage Detox Soup Recipe down into two steps. Step one is simply sautéing your garlic, mushrooms, onions, and cabbage. Step two entails adding in the broth and remaining veggies, at which point the soup will then be cooked until the vegetables become fork-tender. It’s so simple!
Cabbage Soup Serving Suggestions
Cabbage soup is perfect for a soup and sandwich combo. Try it with my Chickpea Salad Sandwich recipe and a good bag of potato chips!
Or, you can go the soup and salad route with it. If you decide on this option make sure you either add some beans to the soup or pair it with a salad that has some healthy plant-based protein. My Greek Quinoa Salad is a great option because it’s loaded with healthy protein sources like chickpeas and quinoa.
Finally, this soup is so warm and filling that you can eat it all by itself with some good bread and vegan butter.
How To Store Cabbage Detox Soup
Cabbage soup keeps well for up to 4 days if refrigerated in an airtight container. You can also freeze this soup for several months; just make sure you allow the soup to cool down to room temperature before storing it in the freezer.

- 1/4 Cup olive oil
- 5 Tablespoons vegan butter
- 4 Garlic cloves, crushed and minced
- 8 to 10 Bella mushrooms, quartered
- 1 Small head of cabbage, chopped
- 2 Bunches of green onions, chopped
- 1 Teaspoons Italian seasoning
- 1/2 Teaspoon dried dill
- 1/4 Teaspoon white pepper
- 2 Large carrots, chopped
- 2 Stalks of celery, chopped
- 3 Medium-sized red potatoes, cut into 3/4-inch cubes
- 6 Cups vegetable broth
