I was blessed with a mom that made good food. While I had my share of sweets as a child, my mom passed along a love for homemade desserts made with fresh fruit instead of processed sugars. The quality of flavor is so much richer when fresh ingredients are used and this Blueberry Toast recipe is no exception. The Blueberry Sauce in this recipe is sweet but only subtly so. I use maple syrup as a natural sweetener but in moderation; this allows the full flavor of fresh blueberries to remain the focal point.
Cashew Cream Cheese is something of a canvas upon which the blueberry flavors are prominently displayed. My Vegan Cream Cheese recipe is made with raw cashews and non-dairy yogurt. The flavor is mild and the texture is soft and smooth.

Blueberry Toast Recipe
- Bread. Use either sliced French or Italian bread.
- Vegan Cream Cheese. Use my Vegan Cream Cheese recipe. I make it using raw cashews and non-dairy yogurt.
- Blueberry Sauce. Use my Blueberry Sauce Recipe. Made with fresh blueberries, maple syrup, and lemon juice.
- Lemon zest. Use a microplane or handheld grater to zest the lemon.
How To Make Blueberry Toast
- Toast bread. Toast bread using a toaster. You can also grill the bread using a cast-iron grill pan; brush pan with oil, heat over medium-high, and cook each slice of bread for 2 minutes on both sides.
- Add Vegan Cream Cheese and Blueberry Sauce. Spread cream cheese over the toast then add blueberry sauce on top.
- Garnish with lemon zest. Sprinkle lemon zest on each piece of toast.
Vegan Cream Cheese Recipe
- Raw cashews. Soak cashews overnight or for 30 minutes in hot water to soften them. This will ensure that they break down and become smooth when blended in a food processor.
- Lemon juice. Traditional cream cheese is slightly tangy; lemon juice helps here.
- Apple cider vinegar. Also adds a slight tang to the flavor.
- Non-dairy yogurt. Use only unsweetened non-dairy yogurt. This adds a creaminess and softness to the texture.
- Salt. Just a pinch to enhance flavor.
How To Make Vegan Cream Cheese
- Soak cashews. Either soak cashews overnight in a dish placed in the refrigerator or for 30 minutes in very hot water.
- Blend ingredients. Drain and rinse cashews, place them in a food processor or blender along with yogurt, vinegar, lemon juice, and a pinch of salt. Blend until smooth.
- Make adjustments if needed. Taste and add more lemon juice, yogurt, or salt.
- Serve or refrigerate. Serve immediately or store in the refrigerator for up to a week in an airtight container.
Blueberry Sauce Recipe
- Blueberries. Try to always use fresh blueberries for this recipe. However, frozen will work if you’re in a pinch.
- Maple syrup. Use only pure maple syrup which is healthier because it’s made without corn starch.
- Lemon juice. Only use fresh-squeezed lemon juice for this recipe.
- Oil. Use either olive, avocado, or coconut oil to coat the bottom of the pot so blueberries don’t stick when cooking them.
How To Make Blueberry Sauce
- Coat pot with oil. Lightly coat the bottom of a medium-sized pot with either olive, coconut, or avocado oil. This will ensure that berries don’t stick to the bottom of the pot as we begin cooking them.
- Cook berries. Add fresh berries, lemon juice, and maple syrup to the pot; cook over medium-low heat for 10 minutes or until berries begin to emit juice and become soft.
- Let cool. Remove pot from heat and set aside to cool for a few minutes.
- Serve. Serve sauce warm immediately or refrigerate in a sealed mason jar or container.
Can This Recipe Be Made In Advance?
Yes! One of the best things about this Blueberry Toast recipe is that it can be made in advance. I love making an extra batch of the cream cheese and blueberry sauce so I can have this toast throughout the week. Both blueberry sauce and cream cheese will last for up to a week in the refrigerator; make sure to seal them both in an airtight container.
Is Blueberry Toast Healthy?
Although I don’t advocate for loading up on a ton of bread, all other ingredients in this recipe are healthy. The Vegan Cream Cheese is made with raw cashews and I use only fresh blueberries for the sauce. Cashews are a great source of potassium which is believed to promote heart health. Blueberries are also beneficial for heart health; studies have shown that blueberries may help regulate high blood pressure. (1)(2)

Ingredients
- 1 Loaf of French or Italian bread, sliced
- 1/2 Tablespoon lemon zest
- Vegan Cream Cheese
- Blueberry Sauce
For The Vegan Cream Cheese
- 1 Cup raw cashews, soaked
- 1/2 Cup non-dairy yogurt, unsweetened
- 1 Tablespoon lemon juice
- 1 Tablespoon apple cider vinegar
- 1/2 Teaspoon salt
For The Blueberry Sauce
- 2 Cups fresh blueberries
- 1/3 Cup pure maple syrup
- 1 Tablespoon lemon juice
- 1/2 teaspoon olive oil
Instructions
Vegan Cream Cheese
- Soak cashews overnight in a dish placed in the refrigerator or in very hot water for 30 minutes until they become soft.
- Drain and rinse cashews. Place cashews, yogurt, vinegar, lemon juice, and pinch of salt in a blender or food processor and blend until smooth and consistent.
- Make adjustments if needed by adding either more lemon juice, vinegar, salt, or yogurt.
Blueberry Sauce
- Lightly coast the bottom of a medium-sized pot with oil and heat over medium-low.
- Add blueberries, lemon juice, and maple syrup. Cook over medium-low heat for 10 minutes until berries soften and emit juice.
- Remove pot from heat and set aside to let cool.
Assemble Blueberry Toast
- Toast bread using either a toaster or cast-iron grill pan.
- Spread vegan cream cheese over toast.
- Top with blueberry sauce and garnish with lemon zest.
Notes
If using a cast-iron grill pan to toast bread, brush pan with oil, heat over medium-high, and cook each slice of bread for 2 minutes on both sides until grill marks appear.
