I tried to make this Avocado Toast with Sprouts recipe a bit livelier by adding both garlic and red onion. And, of course, lemon juice is a rather traditional ingredient for most guacamoles so it makes an appearance here as well.
The alfalfa sprouts are a perfect garnish. They don’t add much in the way of flavor but they provide a great contrast of texture against the smooth backdrop of creamy mashed avocado.
I know I say it every time, but I love this recipe. It’s filling, absolutely delicious, and pretty darn healthy.

- Avocado. Use ripe avocados. Best way to determine this is by sight and touch; ripe avocados should be darker green in color and slightly soft but still firm to the touch.
- Bread. Use either French or Italian bread.
- Sprouts. There are many different types of sprouts; alfalfa, beet, and broccoli sprouts are just a few. Any of these would work well for this recipe.
- Lemon. This is a key ingredient. It not only keeps the avocado from browning but adds a nice tang.
- Red onion. Finely minced. I love using red onion in this recipe, it adds a nice depth of spice and flavor.
- Garlic. I use fresh minced garlic which also enhances the flavor.
How To Make Avocado Toast With Sprouts
- Toast bread. You can either use a toaster or brush a cast-iron grill pan with oil, heat over medium-high, and cook both sides of each slice for 2 minutes.
- Mash avocado. Add avocado to a large bowl with lemon juice and mash until smooth.
- Mix in remaining ingredients. Mix minced garlic and red onion into the mashed avocado.
- Spread over toast. Evenly spread mashed avocado mixture over each slice of toast.
- Garnish and serve. Sprinkle alfalfa sprouts over the top and serve.
Can You Use Guacamole For Avocado Toast?
Yes! You’re essentially making guacamole when you mash avocados. However, some guacamole might include cilantro which would give your avocado toast more of Mexican-style flavor which is a good variation.
